- 1 cup powdered sugar
- 1 cup heavy cream
- 1 cup blueberries, fresh or frozen
- 1 lemon, zested and juiced
- 1 package of graham crackers
- 1 cup lemon curd
Instructions
- In a mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined.
- Spread a layer of graham crackers on the bottom of a serving dish, ensuring they cover the base evenly.
- Spoon half of the cream cheese mixture over the graham crackers, smoothing it out with a spatula.
- Next, add half of the lemon curd, spreading it evenly over the cream cheese layer.
- Sprinkle half of the blueberries on top, creating a pop of color and flavor.
- Repeat the layers: another round of graham crackers, followed by the remaining cream cheese mixture, lemon curd, and blueberries.
- To finish, sprinkle some fresh lemon zest and top with extra blueberries for a beautiful presentation.
- Chill in the refrigerator for at least 240 minutes before serving, allowing those flavors to meld beautifully!
