Description

A refreshing no-bake dessert combining creamy layers of lemon curd and blueberries, perfect for summer gatherings.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 cup blueberries, fresh or frozen
  • 1 lemon, zested and juiced
  • 1 package of graham crackers
  • 1 cup lemon curd

Instructions

  1. In a mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  2. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined.
  3. Spread a layer of graham crackers on the bottom of a serving dish, ensuring they cover the base evenly.
  4. Spoon half of the cream cheese mixture over the graham crackers, smoothing it out with a spatula.
  5. Next, add half of the lemon curd, spreading it evenly over the cream cheese layer.
  6. Sprinkle half of the blueberries on top, creating a pop of color and flavor.
  7. Repeat the layers: another round of graham crackers, followed by the remaining cream cheese mixture, lemon curd, and blueberries.
  8. To finish, sprinkle some fresh lemon zest and top with extra blueberries for a beautiful presentation.
  9. Chill in the refrigerator for at least 240 minutes before serving, allowing those flavors to meld beautifully!
