- 1 pound beef (chuck or brisket), sliced
- 8 ounces noodles (like udon or ramen)
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Heat sesame oil in a large pot over medium heat. Sauté onions and garlic until fragrant.
- Add sliced beef and cook until browned.
- Stir in carrots, bell peppers, soy sauce, ginger, and beef broth. Bring to a boil.
- Reduce heat and let it simmer for 90 to 120 minutes, or until the beef is tender.
- Cook noodles according to package instructions.
- Serve the beef and broth over the cooked noodles and garnish with green onions.
