- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Combine the juice of the limes, olive oil, garlic powder, cumin, salt, and pepper to create a vibrant marinade.
- Place the chicken breasts in the marinade and let them soak for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
- Slice the avocados and prepare the cherry tomatoes.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken topped with avocado slices and halved cherry tomatoes, garnished with fresh cilantro.
Notes
For best flavor, marinate chicken a few hours or overnight. Sprinkle lime juice on avocados to prevent browning.
