Description

An easy weeknight dinner featuring marinated chicken, buttery avocado, and vibrant cherry tomatoes.


Ingredients

  • 2 chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Combine the juice of the limes, olive oil, garlic powder, cumin, salt, and pepper to create a vibrant marinade.
  2. Place the chicken breasts in the marinade and let them soak for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Slice the avocados and prepare the cherry tomatoes.
  6. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. Serve the grilled chicken topped with avocado slices and halved cherry tomatoes, garnished with fresh cilantro.

Notes

For best flavor, marinate chicken a few hours or overnight. Sprinkle lime juice on avocados to prevent browning.
