A colorful and creamy Italian Grinder Tortellini Salad perfect for summer gatherings, full of flavor and easy to prepare.


Ingredients

  • 1 package cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced salami
  • 1 cup diced provolone cheese
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini: Begin by cooking the cheese tortellini according to package instructions until it’s tender and al dente. Drain the tortellini and set it aside to cool.
  2. Combine the ingredients: In a large bowl, bring together the cooled tortellini, cherry tomatoes, sliced salami, diced provolone cheese, black olives, red onion, and fresh basil.
  3. Make the dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until it’s well combined and fragrant.
  4. Dress the salad: Pour the dressing over the tortellini salad and gently toss everything together until all the ingredients are well coated.
