- 1 package cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup sliced salami
- 1 cup diced provolone cheese
- 1/2 cup sliced black olives
- 1/2 cup diced red onion
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini: Begin by cooking the cheese tortellini according to package instructions until it’s tender and al dente. Drain the tortellini and set it aside to cool.
- Combine the ingredients: In a large bowl, bring together the cooled tortellini, cherry tomatoes, sliced salami, diced provolone cheese, black olives, red onion, and fresh basil.
- Make the dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until it’s well combined and fragrant.
- Dress the salad: Pour the dressing over the tortellini salad and gently toss everything together until all the ingredients are well coated.
- Chill and serve: For optimal flavor, chill in the refrigerator for at least 30 minutes before serving. This will let the flavors meld together beautifully.
