- 2 tablespoons honey
- 1 lime (juiced)
- 1 avocado (diced)
- 1 cup cooked rice
- Salt and pepper to taste
- Olive oil
- Optional toppings: cilantro and lime wedges
Instructions
- In a small bowl, mix together the honey, lime juice, salt, and pepper until well combined.
- Place the chicken breasts in a shallow dish, pouring the honey lime mixture over them. Marinate the chicken for at least 30 minutes.
- Heat a drizzle of olive oil in a skillet over medium heat. Add the chicken breasts and cook until golden and fully cooked, about 6-7 minutes per side.
- Remove the chicken from the heat and let it rest for a few minutes before slicing it into tender strips.
- Layer the cooked rice, diced avocado, and sliced chicken in a bowl to create a stack.
- Garnish with fresh cilantro and lime wedges, serve warm and enjoy!
