Description

A tropical flavor adventure featuring juicy chicken thighs marinated in a sweet and savory blend of pineapple juice and soy sauce.


Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • Green onions for garnish

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, ginger, brown sugar, garlic, and black pepper. Stir until well mixed.
  2. Add the chicken to the marinade, ensuring it’s well-coated. Let it soak for at least 1 hour, or overnight in the fridge for more flavor.
  3. Preheat the grill to medium heat.
  4. Remove the chicken from the marinade (save the marinade for basting!) and grill each piece for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Baste with the remaining marinade during grilling.
  6. Serve hot, garnished with chopped green onions.

Notes

For deeper flavors, marinate the chicken overnight. This dish is freezer-friendly and can be stored for up to 3 days after cooking.
