- 4 chicken thighs (bone-in or boneless)
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1 tablespoon fresh ginger, grated
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- Green onions for garnish
Instructions
- In a bowl, combine pineapple juice, soy sauce, ginger, brown sugar, garlic, and black pepper. Stir until well mixed.
- Add the chicken to the marinade, ensuring it’s well-coated. Let it soak for at least 1 hour, or overnight in the fridge for more flavor.
- Preheat the grill to medium heat.
- Remove the chicken from the marinade (save the marinade for basting!) and grill each piece for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Baste with the remaining marinade during grilling.
- Serve hot, garnished with chopped green onions.
Notes
For deeper flavors, marinate the chicken overnight. This dish is freezer-friendly and can be stored for up to 3 days after cooking.
