Ingredients

  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (like thyme, rosemary, or oregano)
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C). Season your chicken breasts with garlic, olive oil, herbs, salt, and pepper. Bake for 25-30 minutes.
  2. Boil a large pot of salted water, add cubed potatoes, and cook until tender. Drain and mash with milk and butter, seasoning again.
  3. Sauté sliced carrots with brown sugar and a splash of water until tender and glazed.
  4. Serve the chicken alongside mashed potatoes and glazed carrots for a comforting meal.
