Description

A quick and delicious dish of tender steak bites and zesty zucchini in a rich garlic butter sauce, ready in just 15 minutes.

Ingredients

Scale
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add steak bites in a single layer and sear for 1-2 minutes per side until browned. Remove from skillet and set aside.
  4. Add butter to the skillet and melt. Toss in minced garlic and cook for 30 seconds until fragrant.
  5. Add zucchini, cooking for 3-5 minutes until tender-crisp.
  6. Return steak bites to the skillet and toss with the garlic butter.
  7. Cook for another 1-2 minutes until steak is heated through.
  8. Garnish with fresh parsley, if desired, and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove.
