Description
A quick and easy side dish of green beans and mushrooms sautéed in garlic butter, perfect for any meal.

- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare the green beans by trimming the ends and rinsing them under cold water. Set aside.
- Heat a large skillet over medium heat and add the olive oil and 2 tablespoons of butter. Allow the butter to melt.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Toss in the mushrooms and cook for 4-5 minutes until they brown and soften.
- Add the green beans, sprinkle with salt and pepper, and stir to combine.
- Cover the skillet and let cook for 5-7 minutes until the green beans are tender but still crisp.
- Remove the lid and add the remaining tablespoon of butter, stirring until it melts and coats the vegetables.
- Add the lemon juice and stir well to combine.
- Transfer to a serving dish and garnish with chopped parsley if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop for best results.
