Description

A quick and easy side dish of green beans and mushrooms sautéed in garlic butter, perfect for any meal.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the green beans by trimming the ends and rinsing them under cold water. Set aside.
  2. Heat a large skillet over medium heat and add the olive oil and 2 tablespoons of butter. Allow the butter to melt.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Toss in the mushrooms and cook for 4-5 minutes until they brown and soften.
  5. Add the green beans, sprinkle with salt and pepper, and stir to combine.
  6. Cover the skillet and let cook for 5-7 minutes until the green beans are tender but still crisp.
  7. Remove the lid and add the remaining tablespoon of butter, stirring until it melts and coats the vegetables.
  8. Add the lemon juice and stir well to combine.
  9. Transfer to a serving dish and garnish with chopped parsley if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop for best results.
