Ingredients

  • 2 tablespoons garlic butter
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Parmesan cheese (optional) for serving

Instructions

  1. Melt the garlic butter in a large pan over medium heat until bubbling.
  2. Add sliced mushrooms and sauté until soft and golden brown, about 5–7 minutes.
  3. Stir in orzo pasta and toast for 1-2 minutes.
  4. Pour in the broth and bring to a boil.
  5. Reduce heat to low, cover, and let simmer for about 10 minutes or until orzo is cooked al dente.
  6. Stir in fresh spinach until wilted.
  7. Season with salt and pepper to taste.
  8. Serve warm, topped with Parmesan cheese if desired.
