- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 2 cups vegetable or chicken broth
- Salt and pepper to taste

Instructions
- Melt the garlic butter in a large pan over medium heat until bubbling.
- Add sliced mushrooms and sauté until soft and golden brown, about 5–7 minutes.
- Stir in orzo pasta and toast for 1-2 minutes.
- Pour in the broth and bring to a boil.
- Reduce heat to low, cover, and let simmer for about 10 minutes or until orzo is cooked al dente.
- Stir in fresh spinach until wilted.
- Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese if desired.
