Description

Tender beef marinated in a rich balsamic glaze, served with creamy baby gold potatoes and crisp green beans—perfect for an easy weeknight dinner.


Ingredients

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp balsamic vinegar (for glaze)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce (for glaze)
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil (for potatoes)
  • ½ tsp salt (for potatoes)
  • ½ tsp black pepper (for potatoes)
  • ½ tbsp garlic powder (for potatoes)
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil (for green beans)
  • ½ tsp salt (for green beans)
  • ½ tsp black pepper (for green beans)
  • ½ tbsp garlic powder (for green beans)

Instructions

  1. Marinate the steak: In a bowl, whisk together the olive oil, soy sauce, balsamic vinegar, salt, pepper, garlic powder, crushed red pepper, and minced garlic. Add the cubed steak, toss to coat, and let it marinate for at least 15-20 minutes (or up to 4 hours in the fridge for deeper flavor).
  2. Season & roast the veggies: Preheat your oven to 400°F (200°C). On a baking sheet, toss the quartered baby gold potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Roast them in the oven for about 25 minutes or until they are golden and tender. Add fresh green beans tossed with olive oil, salt, pepper, and garlic powder to the sheet during the last 10 minutes of roasting.
  3. Sear the steak bites: Heat a large skillet over medium-high heat. Once hot, remove the steak from the marinade (reserving the marinade) and sear it in batches, cooking for 2-3 minutes on each side until browned. Do not overcrowd the pan.
  4. Make the glaze: In the same skillet, add the reserved marinade, beef broth, honey, and soy sauce. Bring to a simmer over medium heat and cook for about 3-5 minutes, until slightly thickened. Toss the seared steak bites in the glaze until well-coated and serve immediately.
  5. Assemble bowls: In bowls, spoon a generous helping of the roasted potatoes and green beans, followed by the steak bites drizzled with the balsamic glaze.

Notes

Marinate the steak the night before for intense flavor; feel free to use chicken or pork instead of beef.
