Ingredients

Scale
  • 8 slices of soft bread (white, whole wheat, or gluten-free)
  • 1 large cucumber, thinly sliced
  • 1 cup cream cheese, softened (or Greek yogurt)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

  1. Prepare the creamy filling by combining cream cheese, mayonnaise, chopped dill, salt, and pepper in a medium bowl.
  2. Spread a generous layer of the creamy mixture onto each slice of bread.
  3. Layer the thinly sliced cucumbers on half of the bread slices, adding lettuce or sprouts if desired.
  4. Place the remaining slices of bread on top and press down gently.
  5. Slice the sandwiches into quarters or triangles for presentation.
  6. Chill for a short while in the fridge before serving.

Notes

For extra flavor, consider adding a squeeze of lemon juice or mixing in chopped turkey bacon.
