Description

A comforting and flavorful chicken dish with bell peppers and onions, cooked effortlessly in a slow cooker.


Ingredients

  • 2 pounds boneless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • Tortillas for serving
  • Optional toppings: sour cream, cheese, avocado, cilantro

Instructions

  1. Place the chicken breasts in the slow cooker, laying them flat.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Sprinkle the taco seasoning over the veggies and chicken.
  4. Cover with the can of diced tomatoes and green chilies.
  5. Cook on low for 360 minutes or high for 240 minutes until chicken is tender.
  6. Shred the chicken directly in the slow cooker and stir to combine.
  7. Serve the mixture in warm tortillas with optional toppings.
