Description

Deliciously creamy tacos filled with ground chicken, dill pickles, and crispy cheese, perfect for a cozy family dinner.


Ingredients

  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 8 small tortillas
  • 1 cup shredded mozzarella or Jack cheese
  • 1/2 cup chopped dill pickles
  • 2 tablespoons pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese, blended with 1 teaspoon ranch seasoning and a squeeze of lemon

Instructions

  1. In a bowl, mix the ground chicken with garlic powder, paprika, salt, and pepper until well combined.
  2. Cook the chicken mixture in a skillet over medium heat until fully cooked, about 7-8 minutes.
  3. In a separate pan, heat the tortillas until warm and slightly toasted.
  4. Prepare the cheese lace by melting shredded mozzarella or Jack cheese in a non-stick skillet until crispy.
  5. Assemble your tacos by placing a scoop of the chicken mixture, chopped dill pickles, and shredded cabbage in each tortilla.
  6. Top with a dollop of the cottage cheese mixture and drizzle with pickle brine.
