Description

A warm, creamy dish featuring tender mushrooms, creamy beans, and vibrant herbs, perfect for cozy evenings.


Ingredients

  • 2 tablespoons olive oil or butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz (280g) mushrooms, sliced (button, cremini, or a mix)
  • 1 teaspoon dried thyme or Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1/2 cup vegetable or chicken broth
  • 1/2 cup heavy cream or coconut cream for dairy-free
  • 2 tablespoons grated Parmesan (optional)
  • Fresh parsley, chopped, for garnish
  • Optional: crusty bread, pasta, or rice for serving

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
  2. Add the garlic and cook for 30 seconds until fragrant.
  3. Stir in the sliced mushrooms, seasoning them with thyme, salt, and pepper. Cook for 8–10 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
  4. Add the white beans to the skillet and stir to combine.
  5. Pour in the broth and let it simmer for 2–3 minutes to allow the flavors to meld beautifully.
  6. Stir in the cream and continue to cook for another 2–3 minutes until the sauce thickens slightly. If using Parmesan, add it now and stir until it’s melted and creamy.
  7. Taste and adjust the seasoning if necessary, then garnish with chopped parsley before serving.
  8. Serve as-is, or spoon the creamy mixture over crusty bread, pasta, or rice for an extra comforting experience.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Can be made ahead of time and reheated gently.
