Description

A comforting creamy pasta dish with succulent salmon and vibrant spinach, perfect for cozy dinners.


Ingredients

Scale
  • 2 salmon fillets
  • 8 oz pasta (fettuccine or spaghetti)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil
  • Lemon zest (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, and cook for about 4-5 minutes per side, or until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
  5. Add the fresh spinach to the skillet and cook until wilted.
  6. Flake the cooked salmon and add it to the sauce, along with the drained pasta. Toss to combine everything nicely.
  7. Season with salt, pepper, and lemon zest if desired.
  8. Serve immediately and enjoy your elegant dish!

Notes

This recipe can be made ahead. Store leftovers in an airtight container in the fridge for up to 3 days.
