- 2 cups cooked rice
- 2–3 chicken breasts (boneless, skinless)
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheese (Gruyère or Swiss)
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- In a large pan, heat the olive oil over medium heat. Add the sliced onions and cook until they’re beautifully caramelized, about 10-15 minutes, stirring occasionally.
- Once the onions are golden and fragrant, add the minced garlic and cook for an additional minute.
- Season the chicken breasts with salt, pepper, and thyme, then add them to the pan with the onions. Cook until the chicken is browned on both sides.
- Pour in the chicken broth, bringing everything to a gentle simmer. Cover and cook for 15-20 minutes, or until the chicken is cooked through.
- Stir in the cooked rice, sour cream, and shredded cheese until well combined and creamy.
- Cook for a few more minutes until heated through and the cheese is melted.
- Serve warm and enjoy!
Notes
This dish can be made ahead of time and reheated. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
