- 1 cup cottage cheese
- 1 cup all-purpose flour
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, eggs, and sugar (if using).
- In another bowl, mix together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Pour the batter into a greased loaf pan, spreading it evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes before transferring to a wire rack.
- Slice and serve at room temperature or warm it up for a lovely treat.
Notes
This bread can be made ahead and stored in the fridge for up to 3 days. Also, consider using whole wheat flour or gluten-free flour as needed.
