- 2 cups cottage cheese
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup chopped spinach
- 1/2 cup bell pepper, diced
- 1/2 cup onion, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk the eggs until frothy, then stir in the cottage cheese until well combined.
- Mix in the chopped veggies — spinach, bell pepper, and onion — along with garlic and onion powder, followed by a sprinkle of salt and pepper.
- Gently fold in the shredded cheese, mixing it through the veggie-egg mixture.
- Pour the mixture into a greased 9×9 inch baking dish, spreading it evenly.
- Bake for 40-45 minutes or until the edges are golden and the center is set.
Notes
Make ahead by preparing the mixture the night before and storing in the fridge. Let cool slightly before slicing.
