Description

A delightful recipe for Coconut Oatmeal Cookies that combines chewy oats and sweet coconut flakes for a cozy treat.


Ingredients

  • 1 1/4 Cups flour
  • 1/2 Cup room temperature butter (1 stick)
  • 1/2 Cup white sugar
  • 1/2 Cup brown sugar
  • 1 Cup sweetened coconut flakes
  • 1 Cup old-fashioned oats
  • 1 Egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) to get it nice and toasty.
  2. In a mixing bowl, cream together the room temperature butter, white sugar, and brown sugar until it becomes a creamy, light mixture.
  3. Add in the vanilla extract and the egg, then stir well to combine everything.
  4. Sift the salt, flour, baking powder, and baking soda together, and gradually add it to the butter mixture. Stir gently until the flour is just incorporated.
  5. Fold in the old-fashioned oats and sweetened coconut flakes. The dough will be slightly crumbly and thick, but that’s what you want!
  6. On a greased baking sheet, use a spoon to scoop out about 1 1/2 tablespoons of dough. Roll it into a ball and place it on the sheet, leaving space between each cookie.
  7. Bake in the preheated oven for about 15 minutes, or until the edges turn golden brown.
  8. Allow the cookies to cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be personalized with chocolate chips, nuts, or dried fruits. Make the dough ahead of time and refrigerate for up to two days.
