Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the diced potatoes and chicken broth, bringing the mixture to a gentle boil. Reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the sliced sausage and cook for an additional 5-10 minutes.
- Gently stir in the cream or milk, seasoning with salt and pepper to taste.
- Garnish with chives or parsley before serving.
