A refreshing and creamy cucumber sandwich that’s perfect for tea parties and summer gatherings.
Ingredients

- ¾ cup cream cheese (whipped)
- ¼ cup sour cream (or mayonnaise)
- 2 tablespoons dill (finely chopped)
- Kosher salt, to taste
- ½ English cucumber (thinly sliced)
- 8 slices sandwich bread (crusts removed)
Instructions
- Combine the cream cheese, sour cream (or mayonnaise), chopped dill, and a pinch of kosher salt. Stir until smooth.
- Spread a generous layer of the cream mixture over one side of each slice of bread.
- Place a layer of cucumber slices on half of the bread slices, slightly overlapping.
- Gently place the other slices of bread on top, spread side down, and press to close.
- Trim off the crusts with a serrated knife and cut into desired shapes.
- Arrange the sandwiches on a serving dish and top with extra dill or cucumber slices.
Notes
For a twist, mix in mashed avocado or add thinly sliced radishes for extra flavor. Make the spread ahead of time but assemble just before serving.
