Description

A refreshing and creamy cucumber sandwich that’s perfect for tea parties and summer gatherings.

Ingredients

Scale
  • ¾ cup cream cheese (whipped)
  • ¼ cup sour cream (or mayonnaise)
  • 2 tablespoons dill (finely chopped)
  • Kosher salt, to taste
  • ½ English cucumber (thinly sliced)
  • 8 slices sandwich bread (crusts removed)

Instructions

  1. Combine the cream cheese, sour cream (or mayonnaise), chopped dill, and a pinch of kosher salt. Stir until smooth.
  2. Spread a generous layer of the cream mixture over one side of each slice of bread.
  3. Place a layer of cucumber slices on half of the bread slices, slightly overlapping.
  4. Gently place the other slices of bread on top, spread side down, and press to close.
  5. Trim off the crusts with a serrated knife and cut into desired shapes.
  6. Arrange the sandwiches on a serving dish and top with extra dill or cucumber slices.

Notes

For a twist, mix in mashed avocado or add thinly sliced radishes for extra flavor. Make the spread ahead of time but assemble just before serving.
