Description

Ingredients

  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Stir gently, cover, and reduce the heat to low. Let it simmer for about 15 minutes until the rice is tender and fully cooked.
  2. While the rice is cooking, grab a large bowl and combine the cooked rice, black beans, chopped cilantro, lime juice, and olive oil. Mix well until all the ingredients are beautifully combined.
  3. Season the mixture with salt and pepper to taste. Serve warm as a delicious side dish or as a colorful base for your favorite protein.
