Description

A hearty Chickpea Salad Sandwich packed with creamy, savory flavors perfect for lunch or meal prep.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Whole grain bread or sandwich rolls
  • Lettuce leaves (optional)

Instructions

  1. Mash the chickpeas with a fork until chunky.
