Description

A heartwarming comfort dish featuring crispy fried chicken topped with rich creamy gravy, perfect for family gatherings.


Ingredients

  • 68 thinly sliced chicken breasts
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 Tbsp hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup all-purpose flour (for gravy)
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a deep fryer or a large pan on the stove (a few inches deep) to 325°F.
  2. Whisk together the 2 cups of flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
  3. Whisk the buttermilk, egg, and hot sauce together until well combined in another bowl.
  4. Dredge each chicken breast in the flour mixture, then dip it into the egg mixture, and finally back into the flour mixture, pressing down to adhere well.
  5. Carefully place the chicken in the hot oil and fry for 3-5 minutes on each side until golden brown. Remove and drain on a paper towel-lined plate. Repeat with all chicken.
  6. Make the gravy by using 1/4 cup of the oil left from frying in a large pan on medium-high heat. Stir in the 1/3 cup of flour and cook for about 1 minute.
  7. Gradually add in the milk while whisking to combine. Continue whisking until thickened, then season with salt and pepper to taste.
  8. Pour the gravy generously over each piece of chicken just before serving. Enjoy!

Notes

Marinate chicken in buttermilk overnight for juicier results. If buttermilk is unavailable, use regular milk with a tablespoon of vinegar or lemon juice.
