Description

A cozy and comforting meal featuring juicy chicken breasts, fresh basil, creamy mozzarella, and vibrant cherry tomatoes, all cooked in one skillet.


Ingredients

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup pesto
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a skillet, heat a generous drizzle of olive oil over medium heat. Season the chicken breasts with a sprinkle of salt and pepper on both sides. Cook the chicken until it’s beautifully browned and cooked through, around 6-7 minutes per side.
  2. Once the chicken is cooked, add the halved cherry tomatoes and pesto to the skillet. Stir to combine.
  3. Drizzle the balsamic glaze over the chicken and tomatoes.
  4. Sprinkle the shredded mozzarella cheese over the top and cover the skillet. Let it sit for about 2-3 minutes until the cheese is melted.
  5. Finish by garnishing with fresh basil before serving.

Notes

For added flavor, consider squeezing fresh lemon juice before serving, or trying different pesto variations.
