- 2 chicken breasts
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup pesto
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a skillet, heat a generous drizzle of olive oil over medium heat. Season the chicken breasts with a sprinkle of salt and pepper on both sides. Cook the chicken until it’s beautifully browned and cooked through, around 6-7 minutes per side.
- Once the chicken is cooked, add the halved cherry tomatoes and pesto to the skillet. Stir to combine.
- Drizzle the balsamic glaze over the chicken and tomatoes.
- Sprinkle the shredded mozzarella cheese over the top and cover the skillet. Let it sit for about 2-3 minutes until the cheese is melted.
- Finish by garnishing with fresh basil before serving.
Notes
For added flavor, consider squeezing fresh lemon juice before serving, or trying different pesto variations.
