- 1 cup fresh or frozen cherries, pitted and halved
- 1/3 cup brown sugar
- 1/4 cup flour
- 1/2 teaspoon cinnamon
- 2 tablespoons butter, softened
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine 1 cup flour, granulated sugar, baking powder, baking soda, and salt in a mixing bowl.
- Whisk together the buttermilk, vegetable oil, egg, and vanilla extract in another bowl until smooth and creamy.
- Mix the wet ingredients with the dry ingredients, stirring just until combined; fold in the cherries.
- Prepare the streusel by mixing brown sugar, 1/4 cup flour, cinnamon, and softened butter until crumbly.
- Divide the muffin batter evenly among the muffin cups and sprinkle the streusel over the top.
- Bake for 20-25 minutes or until a toothpick comes out clean with a few crumbs attached.
- Cool for a few minutes before serving.
