Description

Delicious and comforting Cherry Cobbler Muffins, perfect for brunch or as a sweet treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine 1 cup flour, granulated sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Whisk together the buttermilk, vegetable oil, egg, and vanilla extract in another bowl until smooth and creamy.
  4. Mix the wet ingredients with the dry ingredients, stirring just until combined; fold in the cherries.
  5. Prepare the streusel by mixing brown sugar, 1/4 cup flour, cinnamon, and softened butter until crumbly.
  6. Divide the muffin batter evenly among the muffin cups and sprinkle the streusel over the top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean with a few crumbs attached.
  8. Cool for a few minutes before serving.
