Ingredients

  • 1 cup brown sugar, lightly packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups finely grated carrots
  • 1 cup unsweetened coconut
  • 1 cup California raisins
  • 6 ounces cream cheese, softened
  • 8 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 1/3 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F, and line several baking sheets with parchment paper; set aside.
  2. Cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until thoroughly combined.
  4. Gradually add in the flour, oats, baking soda, baking powder, cinnamon, and salt, stirring until just combined.
  5. Fold in the grated carrots, coconut, and raisins, creating a luscious, sticky dough.
  6. Drop dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake the cookies for 9-10 minutes, or until the edges are just beginning to brown and the tops no longer look shiny.
  8. Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the creamy frosting by whipping together cream cheese, butter, and vanilla until smooth.
  10. Spread a tablespoon of frosting on one cookie and gently press another cookie on top to create a sandwich.
  11. Allow the frosted cookies to set for 1-2 hours before serving.
  12. Store leftovers in an airtight container in the fridge for up to 5-7 days.

Notes
