- 1 cup long grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the onion, bell pepper, and garlic; sauté until soft and golden.
- Stir in the rice, allowing it to toast for 2 minutes.
- Add the shrimp, Cajun seasoning, chicken broth, salt, and pepper; watch it bubble.
- Bring to a boil, then reduce heat to low. Cover and let simmer for 20 minutes.
- Fluff with a fork, sprinkle with chopped green onions, and serve!
Notes
