Description

Enjoy classic cookies with a healthy twist—soft, chewy, and made with wholesome ingredients.

Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup oats (gluten-free if necessary)
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (dairy-free if desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, combine almond flour, oats, baking soda, and salt. Whisk together until well-blended and set aside.
  3. Melt and combine: In another bowl, mix melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until fully combined.
  4. Bring the wet ingredients gradually to the dry ingredients, stirring until a dough forms. Fold in the dark chocolate chips until evenly distributed.
  5. Scoop the dough using a tablespoon or cookie scoop, placing it onto the prepared baking sheet a couple of inches apart.
  6. Bake the cookies for about 10-12 minutes, until the edges are lightly golden. They will firm up as they cool.
  7. Cool them on the baking sheet for a few minutes before transferring to a wire rack. Enjoy while warm!

Notes

Refrigerate cookie dough for up to 3 days or freeze for longer storage. Feel free to customize ingredients based on dietary needs.
