- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (dairy-free if desired)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the dry ingredients: In a large bowl, combine almond flour, oats, baking soda, and salt. Whisk together until well-blended and set aside.
- Melt and combine: In another bowl, mix melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until fully combined.
- Bring the wet ingredients gradually to the dry ingredients, stirring until a dough forms. Fold in the dark chocolate chips until evenly distributed.
- Scoop the dough using a tablespoon or cookie scoop, placing it onto the prepared baking sheet a couple of inches apart.
- Bake the cookies for about 10-12 minutes, until the edges are lightly golden. They will firm up as they cool.
- Cool them on the baking sheet for a few minutes before transferring to a wire rack. Enjoy while warm!
