Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the cheese tortellini according to package instructions, then drain and let cool.
  2. Combine the cooled tortellini, cherry tomatoes, cucumber, black olives, bell pepper, red onion, and mozzarella cheese in a large bowl.
  3. Pour the Italian dressing over the salad and gently toss to combine.
