- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat until shimmering.
- Add the beef chunks to the pot, allowing them to brown beautifully on all sides.
- Remove the beef from the pot and set it aside.
- In the same pot, toss in the chopped onion and minced garlic, sautéing for 2-3 minutes until softened.
- Stir in the tomato paste, dried thyme, salt, and pepper.
- Add the beef back to the pot along with the beef broth, diced potatoes, sliced carrots, and the bay leaf.
- Bring the pot to a gentle boil, then reduce the heat to low.
- Cover the pot and let it simmer for 6-8 hours, or until the beef is fork-tender.
- Remove the bay leaf before serving.

This stew can be easily made ahead, freezes well, and tastes even better the next day.
