Description

A warm, hearty beef stew filled with tender chunks of beef, fresh vegetables, and savory spices, perfect for cozy family dinners.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat until shimmering.
  2. Add the beef chunks to the pot, allowing them to brown beautifully on all sides.
  3. Remove the beef from the pot and set it aside.
  4. In the same pot, toss in the chopped onion and minced garlic, sautéing for 2-3 minutes until softened.
  5. Stir in the tomato paste, dried thyme, salt, and pepper.
  6. Add the beef back to the pot along with the beef broth, diced potatoes, sliced carrots, and the bay leaf.
  7. Bring the pot to a gentle boil, then reduce the heat to low.
  8. Cover the pot and let it simmer for 6-8 hours, or until the beef is fork-tender.
  9. Remove the bay leaf before serving.

Notes

This stew can be easily made ahead, freezes well, and tastes even better the next day.
