Description

A cozy weeknight meal featuring ground turkey, colorful vegetables, and a creamy bang bang sauce served over jasmine rice.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add ground turkey to the skillet and cook until browned and fragrant.
  5. Stir in soy sauce, salt, and pepper, mixing well.
  6. Add chopped red bell pepper, carrots, and broccoli, cooking for an additional 5-7 minutes until vegetables are tender-crisp.
  7. Remove from heat and mix in half of the bang bang sauce.
  8. Serve a mound of cooked jasmine rice in bowls and top with turkey and vegetable mixture.
  9. Drizzle remaining bang bang sauce over each bowl and garnish with green onions and sesame seeds.
  10. Enjoy immediately!
