Description

Crispy on the outside and tender on the inside, these flavorful potato wedges make a perfect snack, side dish, or appetizer.


Ingredients

  • 34 large russet potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • ½ cup shredded parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
  2. Slice the potatoes into wedges, then toss them with olive oil until evenly coated.
  3. In a small bowl, whisk together salt, garlic powder, and Italian seasoning. Sprinkle this mixture over the potato wedges along with the parmesan cheese, tossing to ensure every wedge is well-coated.
  4. Arrange the seasoned potato wedges on the prepared baking sheet in a single layer, skin sides down.
  5. Bake for 25-35 minutes until the wedges are golden brown and fork-tender.
  6. If desired, garnish with fresh parsley before serving!

Notes

Make-ahead: Pre-season the potato wedges a few hours in advance and refrigerate until ready to bake. Store leftovers in an airtight container in the fridge for up to 3 days.
