- 3–4 large russet potatoes
- 4 tablespoons olive oil
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
- ½ cup shredded parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
- Slice the potatoes into wedges, then toss them with olive oil until evenly coated.
- In a small bowl, whisk together salt, garlic powder, and Italian seasoning. Sprinkle this mixture over the potato wedges along with the parmesan cheese, tossing to ensure every wedge is well-coated.
- Arrange the seasoned potato wedges on the prepared baking sheet in a single layer, skin sides down.
- Bake for 25-35 minutes until the wedges are golden brown and fork-tender.
- If desired, garnish with fresh parsley before serving!
Notes
Make-ahead: Pre-season the potato wedges a few hours in advance and refrigerate until ready to bake. Store leftovers in an airtight container in the fridge for up to 3 days.
