A quick and easy vegetable stir-fry noodle dish that’s perfect for busy weeknights, packed with colorful veggies and delicious flavors.

- 8 oz rice noodles or any preferred noodles
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.)
- 3 tablespoons soy sauce or tamari (for gluten-free)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish
Instructions
- Cook the noodles according to package instructions, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Add the sliced onion and cook until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Toss in the mixed vegetables and stir-fry for about 5-7 minutes until tender-crisp.
- Add the cooked noodles to the pan, followed by the soy sauce and sesame oil.
- Mix well, cooking for another 2-3 minutes, and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.
Notes
Feel free to swap in any vegetables you have on hand. This dish can also be customized with proteins like tofu, chicken, or shrimp.
