Description

A quick and easy vegetable stir-fry noodle dish that’s perfect for busy weeknights, packed with colorful veggies and delicious flavors.


Ingredients

  • 8 oz rice noodles or any preferred noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.)
  • 3 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced onion and cook until softened.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Toss in the mixed vegetables and stir-fry for about 5-7 minutes until tender-crisp.
  6. Add the cooked noodles to the pan, followed by the soy sauce and sesame oil.
  7. Mix well, cooking for another 2-3 minutes, and season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.

Notes

Feel free to swap in any vegetables you have on hand. This dish can also be customized with proteins like tofu, chicken, or shrimp.
